Breakfast is hands down my favorite meal of the day. Not only does a good breakfast help you get off on the right foot, but great breakfast foods can be really easy to make. Here’s one of our go-to camping breakfasts:

Breakfast Scramble Recipe
1 bag frozen potatoes or hashbrowns
1 bag (12 oz) frozen peppers and onions blend (drain any extra water if thawed)
1/2 cup of cheese
1/2 pound of bacon or sausage (optional)
Salt and pepper
Cook potatoes, meat, and peppers/onions over medium heat in a frying pan. When the potatoes and meat start to brown, add the eggs and stir well to scramble. When the eggs are cooked, add cheese and cook until melted. Serve with salsa and salt and pepper to taste. Serves 4-6
This breakfast takes about 15 minutes to prepare and is nice and easy to clean up since it only takes one pan.
